
Not really a full blown recipe this one – more like a serving suggestion. Quick and easy – perfect meal when you come home and want to eat in a hurry. One way to get 2 portions of vegetables into your diet in one meal plus the protein in the chicken and the fibre in the rice make this meal not only delicious but very healthy. Hmmm…. now where did I put the rice??
- 1 half roti chicken breast
- 100g brown rice
- 1 bag stir fry veg
Cook the rice as per the instructions on the packet. Tear the roti chicken with your fingers into strips. Heat a large wok or frying pan until it’s really hot and add the chicken strips. Once browned add the stir fry veg for 4 minutes. Serve the chicken and veg in heated pasta bowls on top of the brown rice with a large glass of fruit juice – enjoy!
PS: I realise this might be a bit dry for some tastes so please feel free to let me know of any sauces you like to add. I personally find that the roti chicken and veg have tonnes of flavour and it doesn’t need any sauce.

An excellent source of vitamins and minerals this dish is particularly high in Niacin, Vitamin B6 and Selenium.
There’s nothing more frustrating than the prospect of preparing the complex meal you want when you get home. There’s nothing wrong with using some kind of pre-made jarred sauce with this to add a little kick!
